- 40g butter
- 40g flour
- 270ml milk (semi-skimmed AKA 2%)
- lots of cheddar
- some parmesan
- some breadcrumbs
- a ball of mozzarella
- macaroni (500g)
- bacon
- salami
- chorizo
- 1 onion
- 1 oven at 200C
- 1) Cook the macaroni; don't overdo it because it'll get cooked a bit more in the oven
- 2) dice the onion. Chop up the bacon, salami, and chorizo. Fry the onion and bacon until they're cooked, should be 5-10 mins
- 3) melt the butter and mix it with the flour. (Keep it on heat) Slowly add the milk, whisking as you go. (Stops it forming clumps as much)
- 4) Grate the cheddar and the parmesan and mix them into the butterflourmilk until the cheese is all melted
- 5) Dice the mozzarella and put it on some paper towels to dry a bit
- 6) When the macaroni is done, drain it and then mix it with the cheese sauce and the onion and the meats and the mozarella into a baking dish and mix them all together
- 7) Sprinkle breadcrumbs on the top. This is optional - if you don't do it, you'll get a crispier pasta top. I don't like that, so I put the breadcrumbs on because they crisp less
- 8) Bake it in the oven for about 20 mins
- 9) Serve with some fucking steamed broccoli
