mac n cheese

  1. 40g butter
  2. 40g flour
  3. 270ml milk (semi-skimmed AKA 2%)
  4. lots of cheddar
  5. some parmesan
  6. some breadcrumbs
  7. a ball of mozzarella
  8. macaroni (500g)
  9. bacon
  10. salami
  11. chorizo
  12. 1 onion
  13. 1 oven at 200C

  16. 1) Cook the macaroni; don't overdo it because it'll get cooked a bit more in the oven
  17. 2) dice the onion. Chop up the bacon, salami, and chorizo. Fry the onion and bacon until they're cooked, should be 5-10 mins
  18. 3) melt the butter and mix it with the flour. (Keep it on heat) Slowly add the milk, whisking as you go. (Stops it forming clumps as much)
  19. 4) Grate the cheddar and the parmesan and mix them into the butterflourmilk until the cheese is all melted
  20. 5) Dice the mozzarella and put it on some paper towels to dry a bit
  21. 6) When the macaroni is done, drain it and then mix it with the cheese sauce and the onion and the meats and the mozarella into a baking dish and mix them all together
  22. 7) Sprinkle breadcrumbs on the top. This is optional - if you don't do it, you'll get a crispier pasta top. I don't like that, so I put the breadcrumbs on because they crisp less
  23. 8) Bake it in the oven for about 20 mins
  24. 9) Serve with some fucking steamed broccoli
