Tweaks Anthology: MASSIVE super modular list of tweaks you can install. Super well documented but takes a while to go through all the options.
ie.
"Convenience Tweaks" - Increase movement speed out of combat (50%), Party Members don't leave due to reputation, Party Members don't kill each other when they fight, Increase item stack sizes
"Cosmetic Changes" - Unique Icons for items to help distinguish them (lots of items have reused icons)

Unfinished Business: Re-adds cut content to the game. Quests, Voiced NPC lines, misc item fixes, etc.

BG1 NPC Project: Highly recommended mod that fleshes out party NPCs with interaction banter between them like BG2 and adds more reactions to story beats. When looking for mods, this was recommended a ton because the base game companions are pretty bare bones I hear. (And BG2 is way better when it comes to party members)
I only installed the "Required Modifications" and "Banters, Quests, and Interjections" modules.

Mini Quests & Encounters: Saw this one recommended a bunch. Lots of miniquests to fill empty spots on the map.

Dragonspear UI++: Has some functional utility like access to everyone's inventories at once instead of manually opening one at a time. Quicklooting shortcuts and filters. More data shown at a time for character info/shop slots.
