  1. One Minute Noodles (Black Vinegar/Chilli Oil) and Spicy Miso Braised Eggplant
  2. Servings: 4
  3. NOTE: Ramen noodles come in 150g packets, so if making a single serving just 1/4 all of the ingredient measurements in this recipe.

  5. INGREDIENTS:
  6. ½ cup Chinese black vinegar
  7. ¼ cup high-grade sesame oil
  8. ¼ cup soy sauce
  9. 1 tablespoon sugar
  10. 720 grams fresh noodles of choice, cooked and chilled.
  11. 1 teaspoon minced garlic
  12. 2 tablespoons thinly sliced scallions
  13. 1 tablespoon chili oil
  14. 1 tablespoon sesame seeds
  15. Optional: 0.5 Bok Choy (cut vertically down the serving) per serving

  17. PREPARATION
  18. In a medium bowl, mix together the black vinegar, sesame oil, soy sauce, and sugar. Set aside.
  19. Boil water in the kettle, pour into a bowl, and put the bok choy in. Let sit until cooked through but still crisp - ~3min, then remove. Alternatively, you can steam it.
  20. Cook the noodles according to the package instructions, then drain. Place the noodles in the bowl with the sauce and toss to coat.
  21. Garnish with the garlic, scallions, chili oil, and sesame seeds.

The eggplant recipe itself desperately needs some acidity to cut through the saltiness, and the sauce of these noodles provides that perfectly! The eggplant would also be nice on rice, but would benefit from some lime juice or chinese black vinegar.
