  5. At the 2010 National Homebrewers Conference (NHC) in Minneapolis, now known as Homebrew Con, Ballast Point was handing out this recipe for North Star IPA on a card at Pro Night. Pro Night is when the commercial brewers set up tents and pour what should be the beers they are most proud to serve homebrewers. Usually mostly local breweries pour at Pro Night, but Ballast Point was a big supporter of the American Homebrewers Association and came out to market themselves.   7. This is supposedly the homebrew recipe, called Polaris IPA, that was scaled up to become Ballast Point's breakout hit, Sculpin IPA. "North Star" refers to Minnesota's moniker of The North Star State and it's state motto, "L'Etoile du Nord" (the Star of the Nroth). You can find a simpler, 2018 recipe still being published by Ballast Point's homebrew supply shop, Homebrew Mart, here: https://www.ballastpoint.com/wp-content/uploads/2018/10/Polaris-IPA-All-Grain-Recipe.pdf. The Homebrew Mart recipe still shares some of the same hops and timing, particularly the Crystal and Centennial at 30 min, followed by the late ho,p 1-2 punch of Simcoe and Amarillo.
