I'd be personally fine with a one-note villain if it was some villain of the week type of show, but this is becoming a full-blown plot. So having a one-note villain is a huge disadvantage for the story.

I think you've got the wrong guy. I'm saying that the Stolasfg is implying that wanting character growth for Stella means either
A) You just want fap material or
B) You want Stolas to die (or a combination of both)

In essence anyone who wants character development for Stella HAS to want Stolas to die, hence using a Motte and Bailey fallacy, since both people who want development and people who hate Stolas both enjoy Stella as a character, so they have to be the same.

My fear remains that an unfair aversion to Stolas is going to develop amongst the audience, and by extension, Vivzie.
I want to believe I'm wrong, I suppose we'll see.

The love for Stolas and Blitzo is strong, so I doubt they would steer their attention off the fan favorite couple but, of course, it all just depends on Viv and how they do it.

Though that brings into question, when are we gonna get season 2?
I feel like we're gonna be waiting 2 years again before we get any news after episode 8. At least we'll get Hazbin Hotel now.
