- Seafood Chowder Mash.
- Modified from an existing recipe because I don't have freakin' smoked haddock.
- Super vague recipe:
- -Fish (whatever the hell you want):
- Cut into single portions
- Coat in olive oil, season with salt, pepper
- Cook and set aside
- -Broth:
- Mince onions, saute til translucent
- Add in corn, some white wine, chicken/vegetable stock
- Reduce til around 2/3 to 1/2
- Add in cream
- Toss in scallops (small ones!) at the last minute
- -Mash:
- Saute minced onions and a bit of minced garlic
- Clean potatoes, boil til fork tender
- Run through a ricer or food mill, rough chop and mix skins back in if desired
- Mix in onions, garlic, cream, butter until smooth, or to your desired texture
- Serving is mash, place fish on top, pour soup on
- -Slight variation, If you can get large scallops:
- Get a few rashers of bacon, cut into strips
- Render bacon until crisp
- Remove bacon from oil
- Pan fry scallops in bacon fat, set aside
- Once all ingredients are ready, assemble the same but garnish with a few scallops and sprinkle bacon bits on top
