  1. Ingredients:
  2. - Bread: french sourdough
  3. - Cheese: pepperjack slices, (smoked) cheddar slices, (finely) shredded mozzarella
  4. - Filling: (diced) yellow onion, (chopped) spinach, (baby bella) mushrooms
  5. - Fats: *truffle mayo, spicy harissa mayo, garlic aioli mayo, chipotle mayo, butter, olive oil
  6. - Spices: (sea) salt, (tellicherry black) pepper, *garlic ginger paste, curry powder, smoked paprika, rosemary sprig
  7. - Utensils: 2 flat silicone spatulas, large flat nonstick pan
  8.  
  9. * garlic ginger paste is peeled ginger blended with peeled garlic in 1:1 ratio with some water. You could
  10. get it at a brown people store, make it at home (recommended), or just sautee garlic/ginger separately.
  11. * harissa adds flavorful heat, garlic aioli adds lemony freshness, truffle adds decadence
  12.  
  13. Steps: (1 sandwich)
  14. 1. Filling
  15. a. Dice 1/2 yellow onion. Roughly chop 2 fistfuls spinach. Slice 1/2 small box of baby bella mushrooms (2-3?).
  16. b. Sautee onions in olive oil on medium heat. When translucent, add 2-3 tsp of garlic ginger paste and mushrooms.
  17. c. Spice the mixture with salt, pepper, curry powder, smoked paprika, and throw in a rosemary sprig. Mix to coat.
  18. d. When mushrooms look soft (2-3 min), mix in and cook down spinach. Add more for desired spinach/mushroom ratio.
  19. e. Remove rosemary sprig and set aside filling.
  20. 2. Assembly
  21. a. Spread desired mayo configuration on **outer** sides of 2 sourdough slices. After that, lay bottom slice flat.
  22. b. Layer slices L->R: 1 pepperjack, 1 cheddar, 1 pepperjack. Add on top plenty of the spinach/mushroom filling.
  23. c. Sprinkle on lots of shredded mozzarella. Top off with 1-2 more cheddar slices (cut into strips to fit evenly).
  24. d. Close top with bread slice. Optional step: cut a hole into the top bread slice to broil an egg yolk in later.
  25. 3. Cooking
  26. a. Melt 2 tbsp butter in flat nonstick pan on low heat (but not too low). Dump in the sandwich and don't move it.
  27. b. Make sure heat is just enough to bubble the butter. If filling/cheese spills out, spatula it over the sides.
  28. c. Use 2 spatulas to flip sandwich every 3-5 minutes. Remove sandwich when bread looks dark and crisp.
  29. d. Let sit for 3-5 minutes. Cut into quarters and serve with ??? lemony salad? green sauce? creamy tomato soup?
