  1. use 8 oz cream cheese, softened, with one stick of butter. If you want more frosting, use two 8oz cream cheese and two sticks of softened butter. (you may want to use more or less butter. Play around with it.)Beat this for a few minutes about 3minutes until fluffy. Gradually add the granulated sugar. This requires a LOT of beating for the granulated sugar to be incorporated. So I beat this for about 7-8 minutes. Sometimes longer. I add almond extract to mine. (my hubby loves it this way) and beat some more. I will taste to make sure the frosting is not grainy. If it is, I beat some more. this method requires WAY less sugar than powdered sugar. Gets just as fluffy and works great on all my cakes. OH! And ingredients must be room temperature.
