- Do what tastes right. If you can't taste a difference between a day and seven, awesome. If it tastes better to drink before day five, do it. If coffee that was roasted 21 days ago, and is no longer fresh, tastes better to you than coffee roasted nine days ago, drink coffee that was roasted 21 days ago. Who cares if you're drinking something that the math or science or others' wisdom doesn't support? The decisions you're making with your coffee aren't for people who write FAQs or measure the CO2 off-put of the beans, they're for you. Use what others tell you as a starting place, and branch out to find your personal preferences. If you're taking good notes as you do this, you can figure out what compromises you're willing to make (e.g. if you hate day-after-roast coffee, and all you have is coffee you've roasted yesterday, and all you have other than that is first wave, if you know which you're more willing to deal with, you're golden)
