- For the pasta i used the recipe from the Basics with Babish vid about pasta. Box pasta works too if you aren’t adventurous.
- CHICKEN MARSALA
- CHICKEN
- 1/2 cup flour
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 2 Chicken breasts(cut in half length wise)
- Keep near your go-to chicken seasoning, I like rosemary, garlic powder, salt, and nature seasoning.
- Dredge chicken in dry ingredients. In a big pan(important) with 1 tbsp of olive oil and 2 tbsp of butter, brown your chicken. Remove onto plate a plate and season the shit out of it while your marsala is reducing.
- MARSALA
- 1 tbsp Butter
- 1 tbsp minced garlic
- 8 oz sliced mushrooms(bella)
- 3/4 cup dry Marsala wine
- 1 1/4 cup chicken broth
- 3/4 cup Half and Half
- 2 tbsp chopped parsley
- Salt to taste
- Once the chicken is out of the pan, add butter and mushrooms. Cook until sauteed, add garlic and cook for another 2-3 minutes. Add in wine+ broth and reduce down till about half volume. This takes around 10-15 minutes depending on heat. Add in the half and half, 1 tbsp of parsely and return your chicken. I like to add an extra splash of marsala wine at this point so the dish doesn’t forget who it is. Keep stirring and cook till the sauce thickens, about 3 minutes. Salt the dish well before removing from heat.
- If you are playing along at home with the homemade pasta, I put mine in the boiling water the same time I return my chicken to the pan. It should be done around 2 minutes which gives you time to strain the pasta and plate with the chicken. If you are using dry pasta then you can figure out when to start that yourself.
- Plate your pasta, drizzle some sauce and mushrooms onto it and add some of the parsley left over. Plate your chicken and add drizzle some sauce and mushrooms on it. Bon appetite.
