- For teh Marinade:
- 1/3 cup olive oil
- 1 tablespoon soy sauce
- 1 teaspoon honey
- 3 cloves of garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground coriander
- 1 teaspoon ground tumeric
- 1 teaspoon ground cumin
- salt & pepper to taste
- 2 pounds of skinless chicken breasts, cut into 1 inch cubes.
- Combine all of the ingredients in a bowl.
- Add chicken pieces and mix well.
- Cover and marinate in teh refrigerator for 2 hours.
- Stab chicken bits with skewers and grill over hot coals....
- Note: We don't bother with stabbing, and use an electric griddle - cook about 5 minutes on each side. Altogether about 10-15 minutes of cooking. Chicken's internal temperature should be around 75 degrees.
- Serve with peanut sauce
