  1. I make a pretty killer bolognese if I do say so myself, I've kind of come up with my own recipe after working through a few good ones and putting my own touch on it.
  2. The last one I did I made a giant batch of to store some in the freezer for a future day and I just had some for dinner and it was mighty amazing, fitting for this thread!

  6. 1lbs ground pork
  7. 1lbs ground grass fed beef
  8. 1lbs crimini mushrooms
  9. 2oz dried porcini mushrooms
  10. 2 yellow onions
  11. 8 cloves garlic (more is great!)
  12. 6oz pancetta (more is great!)
  13. 2 carrots
  14. 1 cups white wine
  15. 2x 28oz cans crushed san marzano tomatos
  16. 1.5 cups half and half
  17. 1 cups chicken stock
  18. Olive oil
  19. Step 1: Prep
  20. -Rehydrate porcini mushrooms for 15 minutes in warm water, try not to use too much water. Once rehydrated separate from porcini stock and dice porcini mushrooms. Retain porcini stock for later but let it settle and discard the crud at the bottom.
  21. -Mince pancetta
  22. -dice onions, carrots, crimini mushrooms and garlic

  24. Step 2: Saute veggies
  25. Put olive oil in large sauce pan, add onions, carrot, pancetta and mushrooms. Sautee for 10 minutes or so to get a nice browning action, stirring occasionally.

  27. Step 3: Saute meat & porcini
  28. Add ground meat and porcini mushrooms and cook for 5-7 minutes, stirring and breaking up the meat. Season with salt and pepper.

  30. Step 4: Cook
  31. Add wine and porcini juice and cook for 5 minutes

  33. Step 5: Long cook
  34. Add tomatos, sauce, chicken stock and simmer for an hour or more until very thick.

  36. Step 6: Final cook
  37. Add half and half and cook for 15 minutes.
  38. Add 1.5 tsp salt

  40. Step 7: Eat

  42. This recipe makes me pretty busy and the last time I made it my pictures didn't work out so well. I'll try harder next time. I'm also thinking crazy thoughts like putting brandy in instead of white wine or maybe with white wine, we'll see.
