Think of Vulkan as giving you the tools to really get under the hood - yes, it's more complex, but it offers the chance for greater optimization in the long run.

The reality is that Vulkan's stability depends largely on how it's implemented and the use of validation layers. Moreover, driver bugs can occur with any API, even at OpenGL or DirectX.

I myself am using bindless textures with Vulkan.
