I really feel like Professor Kettleburn resigned because, after his long term as professor at Hogwarts, he has lost several limbs having only had one arm and half of a leg left. I believe he just had a long run as the Care of Magical Creatures professor and wanted to live a quieter life. Though he still liked to go and see dragons in sanctuaries.
