- Gluten Free, Vegan Mesquite Chocolate Oatmeal Cookies
- 1/2 Cup Solidifed Expeller Pressed Coconut Oil
- 1/2 Cup Turbinado Cane Sugar
- 2 TSP Vanilla Extract
- 1.5 fl oz (6 tbsp) Almond Milk
- 1 1/4 Cups All Purpose Gluten Free Flour (King Arthur Flour brand)
- 3/4 Cup Mesquite Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 Tsp Salt
- 1/3 Cup Enjoy Life Chocolate Chips (Or other, this is just GF Vegan)
- 1/3 GF Oats
- - Combine Coconut Oil, Cane Sugar, Vanilla, and Almond Milk. Coconut Oil should be soft, but not melted.
- - Combine all remaining dry ingredients one at a time.
- - Bake for 11 Minutes at 350F. Cookies do not spread very much. Press and form as dough before baking.
- - Makes approximately 24 Cookies.
