  1. Gluten Free, Vegan Mesquite Chocolate Oatmeal Cookies

  3. 1/2 Cup Solidifed Expeller Pressed Coconut Oil
  4. 1/2 Cup Turbinado Cane Sugar
  5. 2 TSP Vanilla Extract
  6. 1.5 fl oz (6 tbsp) Almond Milk
  7. 1 1/4 Cups All Purpose Gluten Free Flour (King Arthur Flour brand)
  8. 3/4 Cup Mesquite Flour
  9. 1/2 tsp Baking Soda
  10. 1/2 tsp Baking Powder
  11. 1/2 Tsp Salt
  12. 1/3 Cup Enjoy Life Chocolate Chips (Or other, this is just GF Vegan)
  13. 1/3 GF Oats
  14. - Combine Coconut Oil, Cane Sugar, Vanilla, and Almond Milk. Coconut Oil should be soft, but not melted.
  15. - Combine all remaining dry ingredients one at a time.
  16. - Bake for 11 Minutes at 350F. Cookies do not spread very much. Press and form as dough before baking.
  17. - Makes approximately 24 Cookies.
