- CASHEW CREAM
- 1 1/2 cups raw cashews
- 3/4 cup water
- 2 tbsp apple cider vinegar
- 3 tbsp lemon juice
- Add to food processor and blend until smooth, then set aside.
- VEGGIES
- 1/2 cup corn kernels
- 1 cup diced red onion
- 1 1/2 cups chopped mushrooms
- 1 chopped red bell pepper
- 1 chopped green red pepper
- 1/2 tsp paprika
- 1/4 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp turmeric
- pinch of black pepper
- Add a few tablespoons of water to a pan and turn heat to medium. Add the veggies and spices and saute until soft.
- On tortilla, layer in order:
- Salt-free refried beans
- Shredded lettuce
- Sauteed veggies
- Pico
- Cashew cream
