  3. Ingredients(Puff dough):
  4. 2 cups self-rising flour
  5. 1/2 tsp salt
  6. 1 cup unsalted butter
  7. 1/2 cup sour cream
  8.  
  9. Instructions (Puff dough):
  10. - In large bowl, whisk together flour, salt, and baking powder
  11. - Slice the butter into small strips
  12. - Add the butter to the bowl, working it in to make a coarse, crumbly mixture where the butter is roughly pea-sized
  13. - Stir in the sour cream (should still be not 100% together)
  14. - Coat a large surface with flour
  15. - Empty bowl onto surface and knead dough together
  16. - Pat the dough thoroughly and roll it into a log
  17. - Keep rolling the dough, eventually ending up in a large rectangle roughly the size of a sheet of printer paper
  18. - Lightly dust both sides of the rectangle and fold it in thirds, like you would to put a piece of paper into an envelope
  19. - Flip the dough over, repeat the kneading, dusting, roll it into a rectangle again, and fold it in 3 again
  20. - Chill dough for 15-30 minutes before use
  21. - Cut and use portions the size of the desired pastry

  23. Ingredients (Spinach Puffs):
  24. Dough you made above
  25. 1 bag (9 oz) fresh spinach
  26. 1/2 cup grated parmesan cheese
  27. 1/2 cup mozzarella cheese (or 1/2 cup feta cheese)
  28. 1 green onion
  29. onion powder
  30. garlic powder
  31. pepper
  32. flour
  33. butter
  34. 1/2 cup sour cream
  35. 1 egg
  36. water

  38. Instructions (Spinach Puffs):
  39. - Preheat oven to 400 degrees
  40. - chop green onion
  41. - Beat 1 egg and 1 tbsp water into a small bowl with a fork
  42. - Stir in mozzarella and parmesan cheese
  43. - Apply a light coating of garlic powder and stir in chopped green onions
  44. - Coat a large surface with flour
  45. - Unfold the pastry sheet onto the surface
  46. - Cut into squares
  47. - Brush pastry with egg mixture
  48. - Top with cheese/spinach mixture
  49. - Fold the square over the cheese/spinach mixture forming a triangle, but leave one end slightly open (the kronk way)
  50. - press down the other 1 side and crimp
  51. - Place onto baking sheet
  52. - Brush once more with egg mixture
  53. - Bake 15 minutes or until golden brown
  54. - Let cool on wire rack for 10 minutes
  55. - Serve!
