- Ingredients(Puff dough):
- 2 cups self-rising flour
- 1/2 tsp salt
- 1 cup unsalted butter
- 1/2 cup sour cream
- Instructions (Puff dough):
- - In large bowl, whisk together flour, salt, and baking powder
- - Slice the butter into small strips
- - Add the butter to the bowl, working it in to make a coarse, crumbly mixture where the butter is roughly pea-sized
- - Stir in the sour cream (should still be not 100% together)
- - Coat a large surface with flour
- - Empty bowl onto surface and knead dough together
- - Pat the dough thoroughly and roll it into a log
- - Keep rolling the dough, eventually ending up in a large rectangle roughly the size of a sheet of printer paper
- - Lightly dust both sides of the rectangle and fold it in thirds, like you would to put a piece of paper into an envelope
- - Flip the dough over, repeat the kneading, dusting, roll it into a rectangle again, and fold it in 3 again
- - Chill dough for 15-30 minutes before use
- - Cut and use portions the size of the desired pastry
- Ingredients (Spinach Puffs):
- Dough you made above
- 1 bag (9 oz) fresh spinach
- 1/2 cup grated parmesan cheese
- 1/2 cup mozzarella cheese (or 1/2 cup feta cheese)
- 1 green onion
- onion powder
- garlic powder
- pepper
- flour
- butter
- 1/2 cup sour cream
- 1 egg
- water
- Instructions (Spinach Puffs):
- - Preheat oven to 400 degrees
- - chop green onion
- - Beat 1 egg and 1 tbsp water into a small bowl with a fork
- - Stir in mozzarella and parmesan cheese
- - Apply a light coating of garlic powder and stir in chopped green onions
- - Coat a large surface with flour
- - Unfold the pastry sheet onto the surface
- - Cut into squares
- - Brush pastry with egg mixture
- - Top with cheese/spinach mixture
- - Fold the square over the cheese/spinach mixture forming a triangle, but leave one end slightly open (the kronk way)
- - press down the other 1 side and crimp
- - Place onto baking sheet
- - Brush once more with egg mixture
- - Bake 15 minutes or until golden brown
- - Let cool on wire rack for 10 minutes
- - Serve!
- Bonus: We're also making cupcakes...but those are from a box, so YEAH!
