  1. Fry up around 8 slices of bacon (for 2 people) in your cast iron pan.

  3. Put one saucepan of boiling water on for pasta. Put in around half a bag of pasta (200-250g I guess).

  5. While that's going, in a different saucepan make a roux with around a half cup of butter and 3-4 tablespoons of flour. Grate a bunch of cheese (maybe a handful or so) and set it aside. Add a cup of milk to the roux and take it to just under a boil until it's thickened, whisking the whole time.

  7. When it's just about boiling, add the cheese and stir. Your sauce should be pretty thick and creamy with nice cheese flavour.

  9. Drain your pasta, add it to the roux saucepan, mix well and top with bacon.
