- 2 zucchini
- 1/2 yellow onion
- Using the coarse teeth of your grater, grate both zucchini and onion onto a plate.
- Add the ground up veggies to a bowl and add:
- 1 tsp garlic powder
- Stir garlic powder in, coating evenly, and then squish down to juice together.
- Let the mix rest for 10 minutes.
- Add:
- 1 cup quinoa flour
- 1 tsp baking powder
- Stir together with a spatula until mixed evenly.
- Preheat skillet on stovetop, Medium-High heat, 8/10 on my stove.
- Once heated, add heaping tablespoons of the mix to the skillet, pressing down with the back of the spoon to make flat, rounded fritters.
- After 1 minute, use spatula to lightly lift the bottoms of the fritters from the skillet, then place back down. We're cooking with no oil and no water, and this prevents burning and sticking to the pan.
- Allow to cook for 2-3 minutes total until golden brown, then flip and cook the opposite side another 2-3 minutes!
