- Dan's Mesquite Chocolate Oatmeal Cookies
- Makes about 50 cookies.
- 1/2 Cup Butter
- 1/2 Cup Baking Margarine (Or 1 Cup Butter total, instead of 50/50)
- 3/4 Cup Turbinado Cane Sugar (Or 3/4 Cup White Sugar)
- 1/2 Cup Brown Sugar
- 2 Large Eggs
- 1 TSP Vanilla Extract
- 1 Cup Mesquite Flour
- 1 1/2 Cups All Purpose Flour
- 1 tsp Baking Soda
- 1/2 TSP Salt
- 1 Cup Chocolate Chips
- 1 Cup Oatmeal
- 1. Cream butter, margarine, and sugar. Let these ingredients mix fully before continuing
- 2. Add eggs and vanilla extract. Let ingredients mix fully before adding more.
- 3. Add salt, baking soda, mesquite flour, all purpose flour in slowly.
- 4. Add chocolate chips and oatmeal.
- Divide into one ounce portions. I previously used baking powder assuming it'd be identical to baking soda. I have not re-tested this recipe to see if they'll flatten normally. The previous batch used baking powder and required flattening prior to baking. Just a heads up.
- Bake in a preheated, 350 F oven for 10 minutes.
- This recipe is a modified version of a recipe found on davescupboard.blogspot.com .
- I have used this basic recipe for other cookie varieties. up to 2 cups of "mix in ingredients" can substitute for the chocolate and oatmeal in the recipe, and the 1 cup of Mesquite Flour can be substituted for 1 cup of All Purpose Flour.
