  1. for the spice mix:
  2. MAKES ABOUT 1 CUP
  3. 2 tablespoons whole Sichuan peppercorns
  4. 2 tablespoons cumin seeds
  5. 2 teaspoons fennel seeds
  6. 2 star anise
  7. 2 black cardamom pods
  8. 1½ teaspoons whole cloves
  9. 2 tablespoons plus 2 teaspoons sugar
  10. 1 tablespoon kosher salt
  11. 2 tablespoons plus 2 teaspoons mushroom powder (see below)
  12. 2 tablespoons cayenne pepper
  13. 1 tablespoon of msg

  15. for the mushroom powder:
  16. 1 (1-inch) square dashi kombu ½ ounce stemmed, dried shiitake mushrooms

  18. for the tofu:
  19. ¼ cup kosher salt, plus more as needed
  20. ½ cup vegetable or peanut oil
  21. ½ cup cornstarch, for dredging
  22. 4 cups dried Tianjin chiles or other medium-hot red chiles, like chiles Japones
  23. ~¾ cup spice mix
