  1. Pasta Al Forno

  4. Ingredients:
  5. 1 aubergine, cut into cubes
  6. 2 red onions, chopped
  7. 1/2 Kg ground beef
  8. Handful of olives
  9. Salt, pepper, paprika
  10. Tomato paste (2-3 cups)
  11. 450g Penne pasta
  12. Olive oil
  13. 1/4 kg shredded cheddar cheese
  14.  
  15. Method:
  16. Boil penne pasta normally
  17. In a pan, heat olive oil then add aubergine, onions and ground beef
  18. Once beef starts to brown, add salt, pepper and paprika
  19. Cook for 30 minutes
  20. Add tomato paste, a little water and simmer for 5-10 minutes
  21. Add boiled pasta and mix well
  22. Preheat oven to 220-230C
  23. Put half the pasta mixture, then half the cheddar, then the other half of the pasta then cheddar on top
  24. Cook for 30-40 minutes
