- Pasta Al Forno

- Ingredients:
- 1 aubergine, cut into cubes
- 2 red onions, chopped
- 1/2 Kg ground beef
- Handful of olives
- Salt, pepper, paprika
- Tomato paste (2-3 cups)
- 450g Penne pasta
- Olive oil
- 1/4 kg shredded cheddar cheese
- Method:
- Boil penne pasta normally
- In a pan, heat olive oil then add aubergine, onions and ground beef
- Once beef starts to brown, add salt, pepper and paprika
- Cook for 30 minutes
- Add tomato paste, a little water and simmer for 5-10 minutes
- Add boiled pasta and mix well
- Preheat oven to 220-230C
- Put half the pasta mixture, then half the cheddar, then the other half of the pasta then cheddar on top
- Cook for 30-40 minutes
