- - 100g unsalted butter
- - 2 shallots, peeled and diced
- - 1 thing of garlic, diced
- - 275g chestnut button mushrooms, cleaned and roughly chopped
- - 1 tsp lemon juice
- - black pepper
- - 2 tablespoons of creme fraiche
- - 100g goat's cheese, chopped up a bit
- - 170g baby spinach, washed and chopped
- - pasta
- 1) chop everything
- 2) melt the butter in a frying pan
- 3) add the shallots and garlic, fry for a few minutes, then add the mushrooms
- 4) keep frying them until it starts to turn brown, maybe 5 mins
- 5) add the lemon juice, creme fraiche, and goat's cheese, mix everything together
- 6) keep at it for a few minutes until the goat's cheese has melted and mixed in
- 7) add the spinach, then keep going until the spinach is all wilted
- 8) serve over pasta, add some pepper on top
