- Ingredients
- Tamarind - Small Lemon size
- Salt - to taste
- Turmeric Powder - a pinch
- Sambar Powder - 1 tsp
- Garlic - 1 whole garlic ( This is optional. Kuzambu can be prepared without it also)
- Sambar Onions - 5 to 6 (This is also optional)
- Asafoetida - a pinch
- Seasoning
- Gingelley Oil - 2 to 3 tablespoons
- Mustard seeds
- Curry leaves
- To grind into paste
- Thoor Dhal - 2tsp
- Red chilly - 1 to 3 ( As per spice required)
- Channa dhal - 2 tsp
- Broken Urad Dhal - 1/2 tsp
- Black pepper - 1 tsp
- Jeera - 1/2 tsp
- Method
- Soak the tamarind in water and extract the juice from it .(You can also use tamarind paste mixed with water). Make the extract to 1 cup
- Fry the above ingredients in oil and grind it into a fine paste
- Fry the onion & garlic in oil till it becomes light brown
- In a kadai heat oil, add the above seasonings.
- Once the mustard splutters, add the tamaring extract.
- to the above add the sambar powder & salt and bring it to boil
- then add the fried onion & garlic and allow it to boil till the onions are cooked .
- After the onions are cooked add the ground paste and boil it for a minute ( do not boil for a long time)
- Serve hot with grilled appalams
