  10. Ingredients

  12. Tamarind - Small Lemon size
  13. Salt  - to taste
  14. Turmeric Powder -  a pinch
  15. Sambar Powder - 1 tsp
  16. Garlic - 1 whole garlic ( This is optional. Kuzambu can be prepared without it also)
  17. Sambar Onions - 5 to 6 (This is also optional)
  18. Asafoetida - a pinch
  19.  
  20. Seasoning

  22. Gingelley Oil - 2 to 3 tablespoons
  23. Mustard seeds
  24. Curry leaves
  25.  
  26. To grind into paste
  27. Thoor Dhal - 2tsp
  28. Red chilly - 1 to 3 ( As per spice required)
  29. Channa dhal - 2 tsp
  30. Broken Urad Dhal - 1/2 tsp
  31. Black pepper - 1 tsp
  32. Jeera - 1/2 tsp

  34. Method
  35. Soak the tamarind in water and extract the juice from it .(You can also use tamarind paste mixed with water). Make the extract to 1 cup
  36. Fry the above ingredients in oil and grind it into a fine paste
  37. Fry the  onion & garlic in oil till it becomes light brown
  38. In a kadai heat oil, add the above seasonings.
  39. Once the mustard splutters, add the tamaring extract.
  40. to the above add the sambar powder & salt and bring it to boil
  41. then add the fried onion & garlic and allow it to boil till the onions are cooked .
  42. After the onions are cooked add the ground paste and boil it for a minute ( do not boil for a long time)
  43. Serve hot with grilled appalams
