As per subreddit rules I can't link those here, and most of them aren't good to read from for various reasons so try to switch to Mangastream as soon as you reach chapter 53.

Tokyo Ghoul Novels: There are 3 of these. These are side stories, though I do recommend checking them out as the first one introduces a character who appears later in the manga.

Tokyo Ghoul Days (novel 1) - takes place between chapters 35 and 36

Tokyo Ghoul Void (novel 2) - takes place between chapters 79 and 80, can read after 86 if desired.

Tokyo Ghoul Past (novel 3) - backstories from before the original manga, ideal to read after finishing the original manga.

Tokyo Ghoul JACK: A 7 chapter spinoff manga taking place years before the original manga. Can be read after chapter 45 if you want to use it as an introduction to some characters, or after 79 if you want to be introduced to them in the original manga first.

Tokyo Ghoul Oneshot: This is basically just a single chapter prototype version of the manga. Can be read whenever you want, but is entirely optional and non-canon.

Tokyo Ghoul Jail and Unused Root A drafts Both of these are alternate routes to the story. Tokyo Ghoul Jail is a game which had scenarios written for it by the manga's author Sui Ishida (though not all scenarios were used). These scenarios were also released in book form. Tokyo Ghoul Root A is the anime's second season, and was advertised as being an alternate route written by the manga's author, though only some concepts from his drafts were used. Parts of his drafts have been released in an artbook. Unfortunately there's no complete translation of these, but if you're interested you can have a look at the few parts that have been translated after you finish reading the first manga.
