- Preheat oven to 400F.
- Line cake pan with parchment paper.
- In a large bowl mix together:
- 1 cup quinoa flour
- 1/3 cup whole wheat flour
- 1 tbsp ground flax
- 1 tbsp nutritional yeast
- 1/2 tsp baking powder
- 1/2 tsp oregano
- 1/4 tsp garlic powder
- Once mixed well, add 3/4 cup water and slowly blend with spatula, make a thick batter.
- Spread the batter onto the prepared pan, smooth out evenly.
- Bake for 20 minutes at 400F.
- Remove from the oven and using the parchment paper flip the crust over, peeling back the paper.
- Take out of oven and spread on no-salt tomato sauce.
- Sprinkle over 1/2 tsp basil.
- Top with:
- Broccoli florets
- Sliced mushrooms
- Corn
- Chopped spinach
- Bake for 5 more minutes.
- Sprinkle on nutritional yeast!
- Allow to cool for a couple of minutes, then slice and serve!
