Millie probably likes Metal. Moxxie only likes pretentious stuff like Tool, a Perfect Circle, or big name non-English bands like Rammstein, Eisbrecher, etc.
He may also like old school stuff like Metallica, Iron Maiden or KISS, but isn't a fan of showy stuff like Marylin Manson or Alice Cooper.

Basically, he's the guy who claims to like Metal, but can't admit he's just casual with a few select songs he likes, while Millie is the headbanging Metalhead.

It a pretty simple and funny idea.
Not sure what else to do with it other than simple gags and doubt that that's canon. He seems like a more practical/simple guy when horses aren't involved.
