- 5 small white potatoes
- 1/2 onion
- 22 minutes pressure cook with a little water in the bottom
- Mash up with peels
- Cumin
- Garlic powder
- Chili powder
- Chipotle powder
- Black pepper
- Blended into mashed taters
- Halve three poblanos, seeds out, stuff with potato
- Bake @ 425 for 15 minutes
- Pico:
- 1 roma tomato
- 1/2 white onion
- 1 plump jalapeno
- Diced, blend, drizzled with 1 lime quartered and juiced
- Spinkle over potatoes and push down lightly to break the baked in crust topping
