  54. First, there is good, valid evidence that ingesting aspartame can
  55. increase feelings of hunger. The original work was done by John
  56. Blundell (Blundell, J.E., and Hill, A.J. Paradoxical effects of an
  57. intense sweetener (aspartame) on appetite. Lancet i: 1092-1093, 1986).
  58. and I have published similar findings in which the aspartame was
  59. embedded in chewing gum (Tordoff, M.G., and Alleva, A.M.
  60. Oral stimulation with aspartame increases hunger.
  61. Physiology and Behavior 47: 555-559, 1990).
  62. This work also shows a complex, gender-related sweetness-response
  63. effect, which may explain why you feel "ravenous" after consuming some
  64. aspartame-containing products but not others. There are several
  65. published reports from other groups as well, but also at least an equal
  66. number of failures to find an effect of aspartame on hunger.
  67.
  68. My reading of the literature is that there is a very, very small effect
  69. of aspartame to increase hunger-- so small that it is practically
  70. undetectable in the real world, outside the lab. Moreover, although
  71. there may be an increase in hunger, it is even less clear whether this
  72. translates into an increase in food intake. One thing that is clear,
  73. however, is there are no studies showing that consuming aspartame
  74. increases body weight-- if anything the data point in the other
  75. direction.
  76.
  77. Second, it is tempting to think this increased hunger produced by
  78. consuming asparatme is due to "anticipatory" changes in insulin levels,
  79. which is termed the "cephalic phase insulin response". However, the
  80. evidence is against it. The best paper on this topic is by my
  81. colleague, Karen Teff (Teff, K.L., Devine, J., and Engelman, K.
  82. Sweet taste: effect on cephalic phase insulin release in men.
  83. Physiol Behav 57: 1089-95, 1995). There are many cephalic phase
  84. responses, such as salivation, gastric acid production, and changes
  85. in liver metabolism, and it's my guess that one of these other
  86. responses is responsible for the appetite.
  87.
  88. I hope this helps
