- Black Cocoa low(ish) carb banana bread
- Dry
- 2 Cups hazelnut/filbert flour
- 1/2 cup black walnuts (Divided)
- 1/4 cup black cocoa
- 1/4 cup inulin
- 2 tablespoons nutritional yeast flakes
- 1 tablespoon ground cinnamon
- 1 tsp baking soda
- 1/4 cup flax seeds
- 1/2 cup no sugar added dark chocolate chips
- Wet
- 3 large eggs
- 3 bananas
- 1 tablespoon vanilla extract
- 2 tablespoons avocado oil
- 3 tablespoons whole milk
- Preheat oven to 350. Line medium size loaf pan with parchment paper then lightly grease.
- Combine all the dry ingredients except the walnuts and chocolate chips combine in a stand mixer or food processor if you want.
- Combine the eggs, vanilla, avocado oil, and milk, whisk, or mix with hand mixer. Then mash/mix in the bananas.
- Combine the dry and wet ingredient mixes, then add the chocolate chips and half the walnuts, fold in.
- Pour ingredient mix into loaf pan, then top with remaining walnuts.
- Bake 50 mins or until done (butter knife comes out clean).
