  7. ½ large zucchini
  8. 1 cup jasmine rice
  9. 2 chicken back quarters (leg and thigh, skin on)
  10. 1 stalk green onion

  12. Sauce
  13. 6 T. soy sauce
  14. 4 T. Mirin
  15. 2 T. rice vinegar

  18. Wash and steam the rice in a rice cooker or a pot. While the rice cooks, julienne the zucchini to produce long ¼'' wide strips. Steam them for 5 minutes, then shock in ice water. Separate the chicken leg and thigh. In a hot pan, sear the leg until the skin browns, then lower the heat to medium-low and let the leg cook. De-bone, skin, and cube the chicken thigh. When the leg is finished, take it out of the pan and add the thigh meat to cook on a medium burner. Mix the soy sauce, mirin, and rice vinegar in a small bowl. When the thigh meat no longer shows pink, add half of the sauce and lower the heat. Let sit for ten minutes, then remove and set aside. Take the thigh skins and fry at high heat until it browns. Take the skins out of the pan, let them dry, then slice them into strips.

  20. To serve, in a bowl pile half of the rice into a half-sphere. Arrange the zucchini around the edge of the rice. Add the chicken thigh meat, then set the leg on top of the rice. Add the remaining sauce over the dish, then garnish with green onion and thigh skin strips. Serve immediately.
