- Chicken Francese Recipe
- ------------------------
- Ingredients:
- Boneless chicken breasts, sliced into thin slices
- Fresh parsley
- Olive oil
- 3 tbsp butter
- 1 tbsp fresh cream
- 1 sliced lemon
- 1/2 cup lemon juice
- 1.5 cups chicken stock
- 2 cups flour
- 4 eggs
- Salt, pepper, paprika
- Method:
- Mix flour with salt, pepper and paprika
- Coat chicken from both sides with the mixture
- Beat the eggs with 3 tbsp water
- Dip the chicken in the egg wash
- Heat 1/4 cup of olive oil in a wide pan
- Put the chicken, flip once. Keep on each side for 2-3 minutes (don't overcrowd the pan)
- Remove chicken, put the slices of lemon in the olive oil, don't flip, until you can smell it
- Add the stock and lemon juice and simmer
- roll the (cold) butter in flour, put it in the pan with the sauce
- Once sauce starts to thicken, add the chicken again
- Add parsley and flip them
- Leave for 10-15 minutes on low heat
- Serve warm
