  1. Chicken Francese Recipe

  4. Ingredients:
  5. Boneless chicken breasts, sliced into thin slices
  6. Fresh parsley
  7. Olive oil
  8. 3 tbsp butter
  9. 1 tbsp fresh cream
  10. 1 sliced lemon
  11. 1/2 cup lemon juice
  12. 1.5 cups chicken stock
  13. 2 cups flour
  14. 4 eggs
  15. Salt, pepper, paprika

  17. Method:
  18. Mix flour with salt, pepper and paprika
  19. Coat chicken from both sides with the mixture
  20. Beat the eggs with 3 tbsp water
  21. Dip the chicken in the egg wash
  22. Heat 1/4 cup of olive oil in a wide pan
  23. Put the chicken, flip once. Keep on each side for 2-3 minutes (don't overcrowd the pan)
  24. Remove chicken, put the slices of lemon in the olive oil, don't flip, until you can smell it
  25. Add the stock and lemon juice and simmer
  26. roll the (cold) butter in flour, put it in the pan with the sauce
  27. Once sauce starts to thicken, add the chicken again
  28. Add parsley and flip them
  29. Leave for 10-15 minutes on low heat
  30. Serve warm
