- Chicken & Potato Rice
- Marinade Ingredients
- 2 Tbsp soy sauce
- ¼ tsp pepper
- 2 Tbsp water
- 1 Tbsp cornstarch
- Other Ingredients
- 2 Tbsp olive oil
- 1 small piece of ginger, sliced (or ground ginger)
- 1 star anise (optional, should use more if you use aniseed instead of star anise)
- 3 cloves (should use more)
- 1 lb chicken, cut into small pieces
- 1 ½ Tbsp soy sauce
- ½ Tbsp salt
- 1 ⅓ cup rice
- 3 medium yellow potatoes, cut into ¼-½“ pieces
- 1 onion, chopped
- 1 Tbsp sesame oil
- 2 cups chicken broth (or bouillon cubes and water)
- Mix chicken and marinade ingredients in sealed container and let marinade overnight. Heat oil in pan/instant pot, and saute onion, ginger, and anise. Add chicken meat and cook for 3-4 minutes until outside turns light brown. Combine with remainder of ingredients in the instant pot and cook on “Rice” mode with the pressure seal sealed.
