- Preheat oven to 350F.
- In a large bowl, add:
- 1 1/2 cups almond flour
- 1 1/2 cups oat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- Whisk together well!
- In food processor, add:
- 5 pitted dates (I pit them myself, then slice into smaller bits to make easier to puree)
- 1/3 cup tahini
- 1 tsp vanilla
- 1/3 cup water
- Puree on high until smooth! Spatula down the sides as necessary.
- Add the date mix to the dry ingredients and stir well.
- Once the dough starts to come together, take to kneading it until evenly distributed. Work it into a ball.
- On a non-stick baking mat, roll out the dough into a rope.
- Divide the rope into 12 even sections - cut in half, then each of those in half. You now have 4 quarters, cut each of those into thirds to make a total of 12 even pieces!
- Roll each into a ball in your hand, then press each ball flat on your baking sheet lined with a non-stick silicone baking mat. I used the bottom of a drinking glass, but you can use your hand as well!
- Place each on a baking sheet lined with a silicone baking mat, spaced evenly.
- Bake at 350F for 15 minutes!
