- Cooked beet root (steamed/baked, cooled)

- Dressing - red wine viniagrette with dijon mustard/honey, walnut oil if available
- Plating - slaw style, everything julienne or "shaved"

- Wild mushroom soup - see outlander cookbook, find mushroom source or experiment with shitake/porchini/crimini if wild mushrooms arent available
- Course 3 - main
- Steak (ribeye or fillet)? Turkey? TBD
- Whole roast chicken for mom plus portions for others who want to taste.

- brown sauce - japanese demi glace vs store "packets" vs Knorr demi glace
- garlic/parm mashed potatos
- roasted brussels w/ parmesan/garlic/balsamic
- Course 4 - dessert
- fudgy/gooey chocolate cake, coffee/bailey's mousse, coffee flavored whipped cream topping
