  1. 450g cream
  2. 600g milk
  3. 75g glucose
  4. 225 sugar
  5. 150g yolk
  6. 4.5g stabilizer
  7. 1 - 1.5g cayenne
  8. 2 sticks (3 - 4 inches long) cinnamon.
  9. 1 stick cinnamon grated finely.

  11. Heat milk with 2 cinnamon sticks, cover, let cinnamon stick seep for 1 hour.

  13. Mix sugar / stabilizer / 1 gram of cayenne, and about half of grated cinnamon, add glucose and milks, Bring to boil for 3 minutes.
  14. Temper the eggs, bring mixture to 155-160 degrees.

  16. add more cinnamon / cayenne to taste.

  18. Chill mixture, then machine it.
