  1. Well, yes and no. Soybeans have to be either cooked or fermented to counter act the enzyme trypsin. Trypsin inhibits protein absorption. Without protein, we cannot function very well or think clearly. (I can attest to problems of eating too much tofu. Some people can eat plenty of it, but I am not one of them.)The other problem with soy is that it is very high in phytoestrogens. You know, plant-based female hormones. Give boys a steady diet and then wonder why they are slow to develop masculine qualities. (A friend mentioned how some Buddhist monks ate large amounts of tofu to lower their sex drive. This might have happened to me when I was eating lots of tofu to save money...but then maybe I was just too darn tired.)

Without B12, your brain will not function properly and without the iron and protein, you will lack energy.Other misinformation about food is the Low Fat quest. Missing fat means missing fat-soluble vitamins such as A, D, E and K. These vitamins are important for bone development, eyesight, heart function, skin and healing. Without essential fatty acids, such as the omega 3 (linolenic acid) and omega 6 (linoleic acid), the human brain will not function properly and depression may ensue. Of course, to replace the fat calories and taste, many low-fat foods become high sugar foods.
