  1. here in mexico we have one that is called Oaxaca, its pretty good!!! you can put it in quesadillas (a soft tortilla with cheese inside and you eat it like a taco) or to grill it. And the flavor is perfect!! its not too strong but not too weak, its perfect in my opinnion.

Oaxaca cheese its actually pretty popular, there is a lot of dishes with it, like chilaquiles, wch is a dish with a lot of tortilla chips, salsa roja (wich contains chile, tomatoe, onion and salt) and Oaxaca cheese on top, its pretty good for a breakfast or lunch, and you can accompany it with a scrambled egg and orange juice, which is how I personally eat it.

  5. the Oaxaca cheese is made out of cow milk, It is a white and medium hard cheese of Mexican origin. It is typical mainly in the region of Valles Centrales, in the state of Oaxaca, Mexico where it was first made. It melts beautifully and is used in numerous dishes. It is made by stretching the curd in the form of threads and giving it a spherical shape.

  9. The inhabitants say that in 1885, the girl Leobarda Castellanos García, only 14 years old, was in charge of taking care of the curdled milk to make the cheese. In an oversight the little girl forgot to attend to her assignment, realizing that the "curd" had already gone from the point to make the cheese and so that her parents did not discover it, she emptied hot water on said dough, resulting in this a foundry and obtaining a taffy mixture which she called Quesillo.

  11. Far from receiving a scolding, the girl's family was delighted with her taste, gaining popularity among the local inhabitants.
