  3. Sorry there is no exact measurement because I made this on the fly.

  5. INGREDIENTS:
  6. - Enough fettuccine pasta for 3.
  7. - Calabasa squash, 2-3 wedges, chopped. For pumpkin, just estimate the weight of it.
  8. - Coconut cream powder, approx 4 spoonfuls depending on desired creaminess level.
  9. - Salt.
  10. - Butter, approx a couple squares or more.
  11. - Onion, whole white, chopped.
  12. - Garlic, few cloves, smashed.
  13. - Bacon, approx 4 slices, chopped.
  14. - Ground beef, approx a handful.
  15. - Italian oregano, approx 1 1/2 stalks, de-stalked.
  16. - Pepper.
  17. - Chili flakes, approx a tablespoon or more.
  18. - Thyme, a sprinkling.
  19. - Thai red curry paste, approx 2 spoonfuls.

  21. KALABASA/PUMPKINS.
  22. Boil chopped squash until soft, then separate them from the water. Set the pumpkin water for pasta because it's already hot and I don't want to waste anything.
  23. Mash the pumpkins, add salt and coconut cream powder. Set aside.

  25. MEATS & SEASONING:
  26. Throw a couple squares of butter onto the pot. Toss in a chopped whole white onion and few cloves of smashed garlic. Let onion and garlic simmer for a couple of minutes until soft.
  27. Toss in chopped bacon and and handful of ground beef. Add the oregano, pepper, chilli flakes, and a bit of thyme. Stir in around two spoonfuls of thai red curry paste.
  28. Mix and let it simmer for a minute until the meat is a good color.
  29. Mix in the mashed creamy pumpkin.
  30. Salt according to taste. It's ok to get salty because pumpkin and pasta will need enough of that and also the world is kind of hell.

  32. PASTA TIME:
  33. Now it's pasta time. Boil pumpkin water and add salt. This is what you will cook the pasta in. I just grab what felt like 3/4 of a 500g pack of fettuccine pasta. Boil until almost al-dente. Drain pasta and mix just enough pasta into the sauce (too much sauce is always a better problem than too much pasta). Simmer for a bit until actually al-dente. Serves around 3 people. 2 if gluttonous or fasting. 1 if you believe in yourself.
