- Healthy Chili Recipe
- 8 Servings- 300 calories, 3.5 g Fat, 41 g Carbohydrates, 23.5 g Protein
- Costs: $11.43 if you have the spices and olive oil already
- Ingredients:
- - 1 lb ground turkey breast
- - 1 15 oz can of black beans
- - 1 15 oz can of kidney beans
- - 1 15 oz can of creamed corn
- - 1 28 oz can of diced or crushed tomatoes
- - 1 yellow onion
- - 1/2 red bell pepper
- - 2 jalapenos
- - 3 cloves of minced garlic
- - 1 cup lentils
- - 1.25 cups chicken broth (low sodium) (1.5 in my case)
- - 2 teaspoons olive oil
- - oregano, cayenne, cumin, chili powder, salt
- Preparation:
- 1. Start by seeding the jalapenos and red bell pepper. My friend Hector (@hvargasjr) mentioned awhile back that roasting jalapenos helps bring out their flavor, so I decided to try that here.
- 2. Chop up the onion and peppers into small pieces.
- 3. Drain and rinse the black beans, kidney beans, and corn.
- Cooking:
- 1. Saute the onions, garlic, red bell peppers, and jalapenos in olive oil in a pan until the onions start to turn transparent.
- 2. Add the Turkey and spices and keep sautéing until the turkey is cooked. I generally adjust spices however I want the food to taste so adjust to your liking.
- 3. Put everything in a crock pot and set to high until it hits a boil. The original recipe calls for 1.25 cups of chicken broth, but my can of tomatoes exploded, so I added a little bit more to make up the texture.
- 4. Let simmer until thoroughly cooked and boiled.
