- "THE DUKE" JOHN WAYNE CASSEROLE (UPGRADED VERSION)
- ==============================================
- The structural upgrade of this recipe requires using Duke's or Kewpie mayo specifically to avoid the egg whites and thickeners in most store brands which will compromise the structure of the casserole. Standard, commercial mayonnaise brands often rely on whole eggs (including egg whites) and added water, starches, or chemical stabilizers. When baked under a heavy 3-cup cheese matrix, those thickeners and egg white proteins can breakdown, weep moisture, and cause your rich onion cream layer to split into a greasy, curdled mess.
- Duke's contains zero sugar and a heavy yolk-to-vinegar ratio, while Kewpie is made exclusively with pure egg yolks and no added water. This creates an incredibly stable, emulsified binder that melts into a velvety savory custard instead of watering down your crust. Do not use other brands.
- This recipe is a high-flavor, structurally sound upgrade to the classic 1970s icon. No bland mozzarella, no thin crusts, no bitter green peppers, and absolutely no soggy fillings. Just pure, high-twang comfort food engineered to fix the flaws of the original potluck bake.
- THE STRUCTURAL UPGRADES
- -----------------------
- * The Emulsion Guard: Uses Duke's or Kewpie mayo exclusively to completely avoid the egg whites, added water, and chemical stabilizers found in other brands that will breakdown and water log the layers under high heat.
- * The Crust: Doubled the biscuits using two 16-ounce cans of Pillsbury Grands! Buttermilk biscuits to build a thick foundation, backed by a dedicated 15-minute solo par-bake at 350 degrees F to ensure it never gets gummy.
- * The Manual Reservoir Compression: Flattening the puffed, par-baked biscuits at the end of step one using a spatula creates a defined, deep well to accommodate the massive volume of meat and toppings.
- * The Single-Skillet Optimization: Engineered to use one large skillet. Washing and drying it after the beef prevents taco seasoning residues from scorching the delicate, sweet peppers and onions during the saute step.
- * The Zero-Soggy Meat Blend: Combined 2 lbs of beef with olive oil, taco seasoning, and water, then built in frozen white and gold sweet corn and a can of Rotel explicitly drained and pressed dry with paper towels to protect the biscuit crust from excess moisture.
- * The Veggies: Cut into fajita-style slices and sauteed sweet yellow and red bell peppers with a medium onion in olive oil and 1 teaspoon of Seasoning Salt instead of regular salt to layer savory, smoky depth right into the aromatic base.
- * The Maximum Cheddar Matrix: Divided 3 cups of thick-cut cheddar shreds. Mixing two cups directly into the mayo-onion cream creates a dense, cheesy savory custard base, while the final full cup forms an impenetrable, crispy golden crust on top.
- * The Top-Rack Finish: Shifting to the top oven rack for 20-25 minutes focuses the heat to perfectly bubble the cheese armor right as the thick biscuit base finishes to a golden brown.

- * 3 cups Sharp Cheddar Cheese, shredded (thick-cut shreds preferred, divided into 2 cup and 1 cup portions)
- ASSEMBLY INSTRUCTIONS
- ---------------------
- 1. BUILD THE FOUNDATION:
- Preheat your oven to 350 degrees F (175 degrees C). Spray the inside of the 9x13-inch glass baking dish with cooking spray.
- Press the dough from both 16-ounce cans of Pillsbury Grands! Buttermilk biscuits into the bottom and slightly up the sides of the dish, pressing the seams together to form a thick, unbroken crust.
- Par-bake the biscuit layer on its own for exactly 15 minutes until it is puffed, slighty brown on top, and set.
- Immediately upon removing from the oven, press down the center of the baked biscuits until they are flat, using a spatula, to make room for the filling.
- 2. THE BEEF, CORN & ROTEL LAYER:
- While the crust bakes, warm up a tablespoon of olive oil in a large skillet, then brown your 2 pounds of ground beef and drain the excess grease.
- Stir in the taco seasoning, pour in the 1/4 cup of water, and mix thoroughly.
- Then, over medium heat, stir in the bag of frozen corn and the 14.5-ounce can of Rotel (having drained it and also pressing out excess water with some paper towels).
- Mix well and heat until the corn is thawed and integrated, then spread this mixture evenly over the flattened center of the par-baked biscuit crust.
- 3. THE AROMATIC LAYER:
- After transferring the meat layer into the biscuit layer, wash that skillet, then completely dry it and pour in a tablespoon of olive oil to sauté the onions and peppers in.
- Add your sliced medium onion and the sliced yellow and red bell peppers along with the 1 teaspoon of seasoning salt and cook until tender and slightly caramelized. Layer the seasoned veggie strips directly over the beef, corn, and Rotel mixture.
- 4. THE ENGINEERED CREAM LAYER:
- In a bowl, mix together the sour cream, your choice of approved mayonnaise (Duke's or Kewpie), the 2 tablespoons of onion powder, and exactly 2 cups of the thick-cut shredded cheddar cheese until perfectly smooth to create your cheesy, rich onion dip base.
- Spread this mixture evenly over the vegetable layer.
- 5. THE ARMOR:
- Spread the remaining 1 cup of shredded cheese evenly over the top of the casserole, ensuring total edge-to-edge coverage.
- 6. THE FINAL BAKE:
- Move the casserole to the top oven rack and bake at 350 degrees F for 20-25 minutes, or until the bottom of the biscuits and the top of the cheese are golden brown and the cheese is bubbling.
- Let it rest for exactly 10 minutes before slicing so the layers set cleanly.
