  9. ✬ 1 3/4 cups all-purpose flour.
  10. ✬ 1 tablespoon pumpkin spice.
  11. ✬ 1 teaspoon baking soda.
  12. ✬ 1/2 teaspoon salt.
  13. ✬ 1 (15 oz.) can pure pumpkin puree.
  14. ✬ 1 cup granulated sugar.
  15. ✬ 1/2 cup packed brown sugar.
  16. ✬ 2 large eggs.
  17. ✬ 1/2 cup vegetable oil.
  18. ✬ 1 tablespoon vanilla extract.

  21. ✬ 1/4 cup granulated sugar.
  22. ✬ 1 large egg yolk.
  23. ✬ 2 teaspoons vanilla extract.

  26. 1. Preheat oven to 375 F. Place paper baking cups into muffin pan. Set aside.
  27. 2. In a medium bowl, whisk flour, pumpkin spice, baking soda, and salt until well combined. Set aside.
  28. 3. In a large bowl, whisk together pumpkin, sugar, and brown sugar.
  29. 4. Beat in 2 eggs, vegetable oil, and vanilla extract. Slowly whisk flour mixture until there are no lumps. Fill papers until 3/4 full.
  30. 5. In the medium bowl, beat cream cheese until smooth. Add in egg yolk and vanilla extract until well combined.
  31. 6. Top muffins with about 1 tablespoon of cream cheese mixture and use a toothpick to swirl it around into the pumpkin batter.
  32. 7. Bake the muffins for 18-20 mins., or until the toothpick inserted into the center comes out clean.
