  1. 1 lb. ground beef
  2. 1 lb. ground pork
  3. 2 eggs
  4. 3/4 cup panko breadcrumbs (could substitute regular breadcrumbs)
  5. 1/2 small onion, finely chopped
  6. 1/2 red bell pepper, finely chopped
  7. zest of 1 lime
  8. 2 Tb. soy sauce
  9. 1 inch knob of fresh ginger, grated
  10. 1/4 cup fresh chopped basil (thai basil is preferred)
  11. 1 Tb. ramen packet seasoning
  12. 1 tsp. red chili flakes
  13. 1 Tb. green curry paste

  15. 1/2 cup 2% milk
  16. 1/2 cup creamy peanut butter
  17. 1/4 cup soy sauce
  18. fish sauce
  19. 2 Tbsp rice wine vinegar
  20. 2 Tbsp brown sugar
  21. 1/2 tsp minced fresh ginger
  22. 3 cloves minced garlic
  23. 1/4 teaspoon crushed red pepper flakes
  24. 3 drops hot pepper sauce

  26. 1/2 cup thinly sliced fresh carrot
  27. 1/2 cup julienned sweet red pepper
  28. 1 cup fresh snow peas

  31. Instructions:

  33. Heat oven to 375°
  34. Combine all ingredients in a bowl and mash together with your hands until all ingredients have been properly distributed throughout the meat
  35. I checked my seasonings at this point by taking a tablespoon of the meat mixture out and cooking in a pan with a little oil. My seasonings were to my liking, but if they aren’t for you, tweak the seasonings above.
  36. Put all of meat mixture into an oiled loaf pan. I used sesame oil because I had it, but you can use any type of oil you have. Spread out the meat and press into the pan so that it is even on the top.
  37. Cook meatloaf to an internal temperature of 165°. This took about 1 hour and 15 minutes for ours to cook.

  41. Bring all ingredients to a boil; stirring constantly,lower heat and cook until thickened. Pour 1/4 cup over meatloaf 10 minutes before end of loafs cooking time. Serve remainder at the table. So Good-Enjoy!
