Västerbottenpaj

Required tools

  • Pie form, around 25 cm (10 in) in diameter
  • Oven

Ingredients

Pie Dough

  • 2 dl (~0.8 cups) wheat flour (should be the standard flour)
  • 1 dl (1/3 cup) graham flour
  • 125 g (~1 stick) butter
  • 1 egg

Filling

  • 3 eggs
  • 2.5 dl (1 cup) light whipping cream (27% fat)
  • 1 dl (1/3 cup) milk
  • 300 g (~2.5 cups) Västerbotten cheese, see here for how to get this
  • 1 krm (a pinch) salt, preferably rock salt
  • 1 krm (a pinch) black pepper, preferably Tellicherry

Garnish (optional)

  • Sour cream
  • Pickled whitefish roe
  • Chopped chives

Steps

Preparation

  • Heat the oven to 200° C (400° F).

Pie Dough

  • Mix the flour and butter.
  • Add the egg and quickly mix together into a dough.
  • Press the dough into the pie form.
  • Let the pie form rest in the fridge for 30 minutes.
  • Prick the bottom of the pie with a fork.
  • Pre-bake the pie shell in the middle of the oven for 10-15 minutes.

Filling

  • Mix together eggs, cream, and milk.
  • Shred the cheese (if not already shredded).
  • Mix the shredded cheese along with salt and pepper into the egg mixture.
  • Pour the filling into the pie shell.
  • Bake in the middle of the oven for 30-40 minutes, or until the filling has solidified and the pie has gotten a nice color.
