Required tools
- Pie form, around 25 cm (10 in) in diameter
- Oven
Ingredients
Pie Dough
- 2 dl (~0.8 cups) wheat flour (should be the standard flour)
- 1 dl (1/3 cup) graham flour
- 125 g (~1 stick) butter
- 1 egg
Filling
- 3 eggs
- 2.5 dl (1 cup) light whipping cream (27% fat)
- 1 dl (1/3 cup) milk
- 300 g (~2.5 cups) Västerbotten cheese, see here for how to get this
- 1 krm (a pinch) salt, preferably rock salt
- 1 krm (a pinch) black pepper, preferably Tellicherry
Garnish (optional)
- Sour cream
- Pickled whitefish roe
- Chopped chives
Steps
Preparation
- Heat the oven to 200° C (400° F).
Pie Dough
- Mix the flour and butter.
- Add the egg and quickly mix together into a dough.
- Press the dough into the pie form.
- Let the pie form rest in the fridge for 30 minutes.
- Prick the bottom of the pie with a fork.
- Pre-bake the pie shell in the middle of the oven for 10-15 minutes.
Filling
- Mix together eggs, cream, and milk.
- Shred the cheese (if not already shredded).
- Mix the shredded cheese along with salt and pepper into the egg mixture.
- Pour the filling into the pie shell.
- Bake in the middle of the oven for 30-40 minutes, or until the filling has solidified and the pie has gotten a nice color.
