  7. 3/4 C. Butter (1 & 1/2 sticks) melted and cooled
  8. 1 3/4 C. Brown Sugar
  9. 1 Tbs. Vanilla
  10. 1/2 tsp. Salt
  11. 1 Egg plus 1 Egg yolk
  12. 1 1/2 C. Flour
  13. 3/4 C. Unsweetened Cocoa Powder
  14. 1/2 tsp. Baking Soda
  15. 1/4 tsp. Baking Powder
  16. 1/4 C. White Sugar
  17. 1/2 C. butterscotch chips
  18. 1 & 1/2 Tbs instant coffee or espresso

  22. Preheat your oven to 350 degrees
  23. Lightly grease a cookie sheet.
  24. Whisk together the butter, brown sugar, vanilla and salt just until combined.
  25. Whisk in the eggs until completely combined.
  26. Stir in the flour, cocoa, coffee, baking soda and baking powder. Mix just until all ingredients are completely combined. The dough will be thick. Now mix in the butterscotch chips.
  27. I suggest refrigerating the dough at this point for 1 hour to make it easier to work with. rolling the dough in the sugar is optional.
  28. Pour the white sugar into a small saucer.
  29. Roll 1 Tbs. of dough in the palms of your hand to form a ball. Roll the dough in the white sugar until coated.
  30. Place on the cookie sheet and flatten with your hands or the bottom of a glass dipped in sugar.
  31. Bake in a 350-degree oven for 12 – 14 minutes.
  32. Do not overcook.
