- Mocha Butterscotch Chip Sugar Cookies!

- Ingredients:
- 3/4 C. Butter (1 & 1/2 sticks) melted and cooled
- 1 3/4 C. Brown Sugar
- 1 Tbs. Vanilla
- 1/2 tsp. Salt
- 1 Egg plus 1 Egg yolk
- 1 1/2 C. Flour
- 3/4 C. Unsweetened Cocoa Powder
- 1/2 tsp. Baking Soda
- 1/4 tsp. Baking Powder
- 1/4 C. White Sugar
- 1/2 C. butterscotch chips
- 1 & 1/2 Tbs instant coffee or espresso
- Directions:
- Preheat your oven to 350 degrees
- Lightly grease a cookie sheet.
- Whisk together the butter, brown sugar, vanilla and salt just until combined.
- Whisk in the eggs until completely combined.
- Stir in the flour, cocoa, coffee, baking soda and baking powder. Mix just until all ingredients are completely combined. The dough will be thick. Now mix in the butterscotch chips.
- I suggest refrigerating the dough at this point for 1 hour to make it easier to work with. rolling the dough in the sugar is optional.
- Pour the white sugar into a small saucer.
- Roll 1 Tbs. of dough in the palms of your hand to form a ball. Roll the dough in the white sugar until coated.
- Place on the cookie sheet and flatten with your hands or the bottom of a glass dipped in sugar.
- Bake in a 350-degree oven for 12 – 14 minutes.
- Do not overcook.
