  1. Whisk together in a large bowl:
  2. 1 and 1/3 cups of all purpose flour
  3. 1/3 cup sugar
  4. 2 teaspoons baking powder
  5. 1/2 tsp baking soda
  6. 1/2 tsp ground cinnamon or pinch of ground nutmeg
  7. 1/4 tsp salt
  8.  
  9. Whisk together in another bowl:
  10. 1 cup milk
  11. 1 cup cottage cheese
  12. 3 tblsp butter, melted
  13. 2 large egg yolks
  14. 1 tsp vanilla
  15.  
  16. Pour the wet ingredients over the dry ingredients and gently whisk them
  17. together, mixing just until combined.
  18. Stir in:
  19. 1/3 cup finely chopped walnuts (optional)
  20. 1/3 dried currants, plumped (optional)
  21.  
  22. Beat 2 large egg whites until the peaks are stiff but not dry, then fold
  23. them into the batter.

  25. The batter will be thick and bubbly, similar to cake batter. Spoon 1/3 cup
  26. batter onto the warmed and greased griddle, nudging the batter into mounds.
  27. Cook until the top of each pancake is starting to dry around the edges.
