  1. Shakshuka - smakker's version.

  3. 1 tbsp olive oil
  4. 1 onion, pelled and diced
  5. 2 clove garlic, minced
  6. 2 Tomatoes chopped
  7. 1 tsp chili powder
  8. 1 tsp cumin
  9. Pinch of sugar (optional, to taste)
  10. Salt and pepper to taste
  11. 4 eggs

  13. Heat a deep, large skillet or sauté pan on medium. Slowly warm olive oil in the pan (don't let the oil turn brown!).

  15. Add chopped onion and garlic, sauté for a few minutes until the onion is translucent and garlic is browned.

  17. Add tomatoes to pan, stir till blended.

  19. Add spices and sugar, stir well, and allow mixture to simmer for 5 minutes.

  21. At this point, you can taste the mixture and spice it according to your preferences.

  23. Add salt and pepper to taste, more sugar for a sweeter sauce if desired.

  25. Turn heat to medium low.

  27. Crack the eggs, one at a time, directly over the tomato mixture, making sure to space them evenly over the sauce.
