  1. 2-3/4 cup baking flour
  2. 1-1/8 cup water (at 110 degrees)
  3. 2 Tablespoons INSTANT yeast
  4. 2 Tablespoons Sugar (Yeast loves sugar and thrives in plus the warm water)
  5. 1/2 teaspoon salt (Salt kills yeast production so use 1/2 tsp. or less)

  7. 1. Use a heavy duty mixer that comes with a bread dough hook. This machine will do all the kneading for you and the dough comes out smoother. Or you can knead by hand. My hands got sore after making a few loafs... lol
  8. 2. Mix flour and salt.
  9. 3. Add the yeast to the flour/salt mixture
  10. 4. Add the sugar to the warm water at 110 degrees, mix thoroughly
  11. 5. Add the warm water/sugar mix to the flour/salt/yeast mix in the mixer bowl.
  12. 6. Now attach your kneading hook to the machine.
  13. 7. Turn on low and watch the machine work it's magic. Now you can add a teaspoon of warm water and a little flour to get the dough from sticking on the bottom. Keep the mixer on for about 10-13 minutes.
  14. 8. Dough should be somewhat stick and elastic when done.
  15. 9. Get a large glass bowl and grease it up with olive oil.
  16. 10. Put the dough in the bowl and smooth a little oil on the dough as well.
  17. 11. Put in a cold oven, with a bowl of boiling water next to it. The steam will make the oven warm and activate the yeast to rise.
  18. 12. Wait 1 hour.
  19. 13. Punch dough down, put out on a wooden board, roll up and tuck the sides under.
  20. 14. put in a greased loaf pan, and let rise another 30-45 minutes.
  21. 15. Preheat over to 350 (9 to 10 min.)
  22. 16. Bake for 35 minutes or until golden brown and sounds hollow when tapped.
  23. 17. Remove from loaf pan. It should just fall out, and cool on a wire rack.
