Settings should have
-no rope break
-Quick match submission
-all possible elims(pin, TKO etc) on and count down off

First of all you should have 3 custom characters built with low defense and high attack (arms body legs)
All grappling moves should be submissions in hopes of getting AI assistance (1 standing submission for your own character)
Body splash for Irish whip standing attack and spear for running attack
reversals should all be submissions if not then strong punch if possible

Your own character should have the quick uppercut for strong punch which is very useful in many situations
Weak punches should be straight arm punch and quick kicks

Try to keep one of the AI's the entire way if possible (more chances for submissions)
If the AI eliminates someone as you eliminate someone, try to see who got the elimination first
AI eliminated first, keep your distance from the AI as the one coming in will attack the other AI
If you eliminated first, grab the AI coming in and submission right away / Strat 2 strong punch right away the AI coming in and hit them again if they go through the rope it is very tight but will work if you get the punch and proper RNG

RISKY
If you notice you need a few more seconds to save you can try to eliminate the other AIs before the next one comes in about 3-4s of time so be quick. Risk chance of all AIs targeting you aka Run over
If one of the AIs is near the ropes, would recommend spearing and letting the other AI take him out if they continue to target of course.
If one of the AIs is injured (holding head/arm, etc) you can go for a submission, if they happen to tap out then you have approx 7-8s to get another elimination.
