  3. Roget: I heard you had a fruit vodka recipe
  4. Dr Kens: I do. Remind me to pass it on to you.

  6. Dr Kens: Oh, right.
  7. Dr Kens: You wanted some recipes for fruit-infused ones, right?
  8. Roget: si
  9. Dr Kens: Favorite fruits?
  10. Roget: Pineapple, Mango, Strawberry, Oranges, Cherries
  11. Dr Kens: Awesome.
  12. Dr Kens: I have excellent news for you.
  13. Dr Kens: I've done infused vodkas with three of those five.
  14. Dr Kens: And I've done lemons instead of oranges.
  15. Dr Kens: And I know Cherries can be done in a similar way.
  16. Roget: YAY
  17. Dr Kens: Okay.
  18. Dr Kens: So the general principal is you want to cut up the fruit into small chunks to be able to infuse their flavors into the vodka as easily as possible.
  19. Dr Kens: But you need to pay attention to the ripeness, too.
  20. Dr Kens: The vodka will taste like the fruit, so if you have a sour/unripe fruit, you'll get those notes exaggerated.
  21. Roget: Okay, Oranges, Mangos are coming into season
  22. Dr Kens: For Pineapple, Strawberries, and Oranges, because there's a lot of fiber/structure, you can cut up the pieces into about half-inch cubes/pieces without worrying about the pieces disintgrating.
  23. Dr Kens: And for oranges make sure you zest the peels.
  24. Dr Kens: Take a vegetable peeler and zest that way.
  25. Dr Kens: Keep as little of the white pith as possible.
  26. Dr Kens: Another orange-specific issue: It's slightly bitter, so cook it in a simple syrup. For a 375 mL bottle of vodka, I use about 1/2 C of Sugar and Water, and a tablespoon or two of orange/lemon juice.
  27. Dr Kens: Doesn't have to be for long. Just make the syrup as normal and add in the orange peels with the sugar.
  28. Dr Kens: For mangoes, you'll have to be a bit more careful.
  29. Dr Kens: Again, as ripe as possible without it being mush.
  30. Dr Kens: It WILL make the vodka cloudy becasue it'll disintegrate, but you can either filter it out with cheese cloth and a fine wire-mesh, or just leave it in. (I recommend that you filter as much as you can out.)
  31. Dr Kens: That's just the fruit part.
  32. Dr Kens: You can add spices.
  33. Dr Kens: For pineapple and mango, vanilla sticks and cinnamon lend themselves really well to the flavors.
  34. Dr Kens: So put a stick of vanilla in each, and about half a stick of cinnamon.
  35. Dr Kens: Once you have them all in a mason jar (preferred, as this is the easiest way to add the fruit), add the vodka and put in a cold dark place or the fridge.
  36. Dr Kens: Shake twice daily. Once in the morning, once in the evening.

  42. Dr Kens: And that's pretty much it! The one thing I have left to tell you is the time.

  44. Dr Kens: So, real rough estimates for time: Pineapples - ~7 days, Mangoes - 5, strawberries (and/or kiwis) - 5-7, oranges - 20+, cherries - ~5-7
